Fresh AF Farms: Supplying the Community with Nutritious Microgreens

Fresh AF Farms is supplying the Blair County community with a new way to enjoy healthy eating.

Started by Kyle and Kelsey Foor this past March, the urban farm specializes in nutrient-packed microgreens. “Microgreens are basically a leafy version of a vegetable,” says Kelsey. “They taste like their mature counterparts, but they’re cut at the age when they have the most nutrition.”

Kyle and Kelsey grow their microgreens at their home in Claysburg in an all-natural and chemical-free greenhouse. What started as a hobby has turned into a wonderful opportunity to supply their community with nutritious produce.

“I was complaining a lot about my lettuce going bad, so Kyle actually grew two trays for me in the basement,” says Kelsey. “I work in a hospital and started taking them to work. People loved them, and then it just blew up from there.”

Fresh AF Farms is the largest microgreens distributor in the area, and Kelsey and Kyle are enjoying educating the community about their nutritious benefits.

“A lot of people don’t understand what they are at first,” says Kyle. They get mixed up with sprouts sometimes. These are grown longer than sprouts and are a little healthier than sprouts because they grow old enough to be able to fend off bacteria. We’re hoping people try them and see how robust and flavorful they are.”

Microgreens last around 10-14 days, which is longer than most regular produce. Fresh AF Farms offers a variety of interesting flavors such as wasabi, popcorn, and sunflower. They also specialize in a range of salad mixes.

In addition to their unique product, Kelsey and Kyle are proud of the low carbon footprint their business is leaving. “All of our containers are compostable, and our bags are also biodegradable. We’re trying to be as eco-friendly as possible,” says Kelsey.

You can find Fresh AF Farms at the Hollidaysburg farmers market on Tuesdays from 11am - 3pm, and the Bedford farmers market on Wednesdays from 9am - 1pm.
